Bleu de Gex whispers rather than shouts—a gentle blue with the delicate floral notes of alpine meadow grasses and the earthy undertone of fresh mushrooms. Its semi-soft, creamy paste yields to the tongue with a subtle spice that blooms slowly, finishing with hints of hazelnut and rich cream, more refined cousin than bold Roquefort.

Bleu de Gex is one of France's rarest blues, made only in the Haut-Jura mountains near the Swiss border. It has been produced there since at least the 14th century.
Unlike most French blues, it uses raw milk and has a relatively mild, floral flavor. It received AOC in 1977 under the name Bleu du Haut-Jura.
