Caciocavallo Silano's PDO designation covers production across the Southern Apennines.
Its prestige cousin, the unprotected Caciocavallo Podolico, is made from the milk of semi-wild Podolica cattle that graze on wild aromatic herbs. Caciocavallo Silano received Italian DOC recognition in 1993 and EU PDO status in 1996.
