Brie's smaller, bolder Norman cousin: a little white drum that ripens to a mushroomy, oozing richness — the cheese in the wooden box, the one France packed for its soldiers. Richer and earthier than Brie, with a pronounced mushroomy, sometimes farmyard aroma from the rind and a buttery, oozing centre when ripe; milky and mild when young.

Camembert comes from the village of Camembert in Normandy's Pays d'Auge, where — as the well-loved legend has it — the farm woman Marie Harel first made it in 1791 with advice from a priest fleeing the Revolution, though records show cheeses were being made there before her time. Like Brie it's bloomed with Penicillium camemberti and ripened from the outside in, but in a smaller format that concentrates its character.
The railways carried it to Paris, the wooden box (from the 1890s) carried it further, and a wartime ration made it France's national cheese. The name is unprotected and made worldwide; the traditional article is raw-milk Camembert de Normandie AOP, hand-ladled within a delimited zone.

Cut like a cake — slim wedges from the centre, through the rind. Don't scoop the middle and strand the shell.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
