Domiati is Egypt's most important cheese, produced since ancient times in the Nile Delta near the city of Damietta (Dumyat).
It is distinctive for having salt added directly to the milk before rennet coagulation, unlike feta and most other white cheeses. The cheese can be eaten fresh or stored in brine for up to two years, developing a sharper, more pungent flavor.
