Graviera is Greece's second most popular cheese after Feta, its name derived from the Swiss Gruyère whose production methods were introduced to Crete in the late 19th century. However, Cretan Graviera (made from sheep's milk) and Naxos Graviera (made from cow's milk) have evolved distinct characters.
Cretan Graviera is ripened in large wheels of 4–7 kg in mountain caves or cellars for a minimum of five months; it develops a sweet, slightly fruity flavor from Cretan sheep grazing on wild herbs. Both Graviera Kritis and Graviera Naxou received EU PDO protection in 1996. It is Greece's primary table and grating cheese after Feta.

Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
