Kalari is a dense, chewy disc that transforms in a hot pan: fried in its own fat, it develops a crisp golden crust and a stretchy, mozzarella-like pull, with a tangy, deeply milky flavour. Locals call it the 'mozzarella of Kashmir' for good reason.

Kalari (or kaladi) comes from the hills of the Jammu region — Udhampur and Ramnagar especially — where Gujjar herders traditionally made it as a way to preserve milk on the move.
The curd is stretched and flattened by hand into dense discs that dry firm but spring back to life over heat. Its great vehicle is the kalari kulcha, a street-food sandwich in which the cheese is pan-fried in its own released fat, salted, and folded into a bun with chutney — a dish that has made the cheese a point of regional pride far beyond the herding families who created it.
