Kashkaval is a yellow stretched-curd cheese widespread throughout the Balkans, derived from the Italian caciocavallo tradition introduced to the region by Vlach shepherds. The name derives from caciocavallo.
It is produced across Bulgaria, North Macedonia, Serbia, and Romania. In Bulgaria it is the most popular hard cheese.
