Lincolnshire Poacher is made by Simon Jones at Ulceby Grange Farm in Lincolnshire, having been developed in the early 1990s.
It is a raw milk, clothbound cheese in the Cheddar style, but with a distinct terroir character from the Lincolnshire Wolds. It has won numerous awards at the World Cheese Awards.
