Mont d'Or is a seasonal cheese produced only from August 15 to March 15 in the Haut-Doubs.
The spruce bark band that encircles the cheese imparts its characteristic resinous aroma and keeps the very soft cheese together. It was long confused with Swiss Vacherin Mont-d'Or until receiving its own AOC in 1981.
