Canastra comes from the Serra da Canastra in southwestern Minas Gerais — seven municipalities around São Roque de Minas — where raw cow's milk is worked the same day, set with rennet, hand-shaped, and started with pingo: the farm's own wild whey culture, saved from yesterday's make and passed down like a sourdough. That living culture, the mountain pasture and the local microflora make every farm's wheel taste a little different.
It's the most celebrated of Brazil's queijos Minas artesanais — recognised as intangible cultural heritage by IPHAN, its method inscribed by UNESCO, decorated with medals at France's Mondial du Fromage, and named the world's best cheese by TasteAtlas in 2022. Eaten at meia cura it's supple and mild; left to age past a month it turns firm and complex, closer to a young Grana. Canastra carries a Brazilian geographical indication (IG Canastra) — a national protection, not an EU PDO.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
