Chile's everyday cheese and its oldest star: pale gold, supple, buttery, freckled with small irregular eyes — the melt behind a sándwich, a pastel de choclo, an empanada. Smooth and springy with a mild, milky-buttery flavour and the faintest tang, turning gently nuttier as it ages; it slices clean and melts obligingly.

Chanco is named for the town of Chanco, in the Maule, and it is the oldest famous cheese in Chile. In the 18th and 19th centuries — when it was a cooked, matured cheese made mostly from sheep's milk in the country between the Maule and Itata rivers — it was reckoned the best cheese in the land; the naturalist Abate Molina, a son of the region, wrote in 1776 that Chile's cheeses were exquisite but that those of Chanco yielded "neither in goodness nor size" to the cheeses of Lodi, and it was exported by river and sea to Lima, Guayaquil and California.
Its fame faded around 1900 amid a flood of European imitations, and — unlike Pisco — it never secured a protected denomination, so the name broadened into a general style. Today Chanco is made from pasteurised cow's milk, and it accounts for close to half of all cheese eaten in Chile.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
