Queso Chihuahua was developed by Mennonite communities who settled in the state of Chihuahua in the 1920s, bringing Dutch cheesemaking traditions.
It is sometimes called Queso Menonita in reference to its Mennonite origins. The mild, melting cheese is essential for chiles rellenos and queso fundido.
