Riddar — Ridder in Norwegian, and 'knight' in both languages — was developed in 1960 at Tresfjord on Norway's western fjord coast by the dairy co-operative Tine, and is usually described as a Nordic cousin of French Port-Salut.
It was the work of a Swedish cheesemaker, Sven Fenelius, which is a good part of why the cheese is so often filed under the wrong country. Its creamy, buttery character and easy melting have made it a fixture of Scandinavian kitchens.

Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
