Schabziger.
Schabziger is unlike anything else on the counter: a small, hard, pale-green cone with a powerful herbal pungency — blue fenugreek and sharp soured milk in equal measure. Never eaten in slices, it's grated and rubbed into butter, noodles, and potatoes, seasoning like a spice.

Schabziger has been made in the Swiss canton of Glarus since at least the Middle Ages — a 1463 assembly decree regulated its production and marking, making it one of the oldest protected food brands in Europe. It is a skimmed-milk cheese: the soured, heated curd is pressed, fermented, dried, and ground with dried blue fenugreek (Zigerklee), which dyes it green and gives its unmistakable aroma, then packed into small cones called Stöckli.
Fat-free and ferociously aromatic, it is classically mixed with butter as 'Zigerbutter' or grated over Älplermagronen. In the United States it sells as Sapsago.
