Stracchino (also called Crescenza) is a traditional Lombard spreadable cheese whose name derives from 'stracch' (tired in Lombard dialect), referring to the tired cows returning from summer pastures whose richer autumn milk was used. It is one of Italy's most ancient fresh cheeses, with records going back to the 12th century.
