Tome des Bauges.
Pale gold and supple, Tome des Bauges melts across your palate with a delicate minerality—grassy and gently nutty—that speaks of Alpine meadows and mountain air. The semi-hard paste yields to the tongue with a creamy give, layered with subtle sourness and the quiet earthiness of a cool cellar, finishing with a whisper of hay. It's a cheese that tastes like the everyday, made extraordinary.

Why it tastes that way.
Tome des Bauges has been made in the Massif des Bauges since at least the 14th century.
It was historically the everyday cheese of mountain farming families, with Beaufort reserved for sale. The cheese received AOC protection in 2002, one of several Savoyard cheeses to gain recognition.
