Valdeón hits with an assertive pungent charge—earthy and mineral-forward, with a sharp bite that mellows into creamy, almost buttery depths. Valdeón is a blue cheese from the Valdeón valley in the Picos de Europa mountains of Castile and León.
It has been made for centuries by local herders and is traditionally wrapped in sycamore maple leaves. It received PGI protection in 2004.
