Valençay.
Valençay's truncated pyramid form hints at the sharp contrasts within: a delicate ash-dusted exterior gives way to a creamy, almost mousse-like center that tastes of tangy goat's milk, fresh hay, and a whisper of toasted nuts. The texture is impossibly soft, nearly lactic in its melt, with a gentle saltiness that lingers on the palate—more refined whisper than aggressive bleating.

The story
How it's made.
Why it tastes that way.
Valençay is a truncated pyramid-shaped goat cheese from the Berry region, with the top deliberately cut.
Legend holds that Napoleon cut the top off a pyramid-shaped cheese in anger after his Egyptian campaign, and local cheesemakers have since maintained this form. It received AOC in 1998.
