Ädelost ("noble cheese") is Sweden's principal blue cheese. Its best-known maker, the Kvibille dairy in Halland (founded 1916), began producing ädelost in the early 1930s, and it went on to become the most widely sold blue cheese in Scandinavia, inspiring several similar blues across the region.
