Bavaria (Allgäu) · Germany
Allgäuer Emmentaler.
Allgäuer Emmentaler greets you with a gentle, buttery aroma and yields to the knife with satisfying firmness. On the palate, it unfolds with understated elegance—mild and creamy, with whispers of hazelnut and orchard fruit that linger softly, never overwhelming. The natural rind crackles slightly, a textural prelude to the smooth, crystalline paste within.

The story
How it's made.
Why it tastes that way.
Allgäuer Emmentaler is the German PDO version of Emmental-style cheese, distinct from Swiss Emmental.
It has been produced in the Allgäu since the mid-19th century when Swiss cheesemakers migrated north. The PDO, granted in 1997, covers the specific Allgäu region and requires raw milk use.
