Bavaria (Allgäu) · Germany
Allgäuer Bergkäse.
Bite into a wedge of Allgäuer Bergkäse and experience the Alpine meadow itself—grassy sweetness and toasted nuts meld with a buttery, crystalline crunch that builds intensity with age. The rind carries earthiness, while the paste exhales subtle fruit notes, as if the mountain air has been trapped inside for months, releasing slowly on your palate.

The story
How it's made.
Why it tastes that way.
Allgäuer Bergkäse has been made in the Allgäu Alps since the 19th century.
The region, straddling Bavaria and the Austrian border, became Germany's primary dairy region when Bavarian monks and Swiss cheesemakers developed alpine cheesemaking techniques there. PDO was granted in 1997.
