Allgäuer Emmentaler is the German PDO version of Emmental-style cheese, distinct from Swiss Emmental.
It has been produced in the Allgäu since the mid-19th century when Swiss cheesemakers migrated north. The PDO, granted in 1997, covers the specific Allgäu region and requires raw milk use.
