Belper Knolle is a specialty cheese from the town of Belp near Bern, created in 1993 by Peter Glauser in his family's village dairy. The small rounds are infused with garlic and Himalayan salt, then rolled in cracked black pepper, giving them an intensely pungent character.
It is grated over pasta or shaved like a truffle. Despite its modern origin, it has gained cult status among cheese enthusiasts.
