Out on the llanos — the vast Orinoco-basin plains that make up a third of Venezuela — cattle far outnumbered refrigeration, so the cheese was made to keep: pressed firm and salted hard, aged in the heat until it could be grated and stored.
That heritage is still in every bite. Firm, white and salty, queso llanero (also plainly queso duro) is the grating cheese of Venezuelan cooking — showered over arepas and cachapas, folded into pabellón criollo, crisped over sweet plantain — the savoury backbone of the everyday table.
