Piedmont · Italy
Bra.
Bra is a study in transformation: the young tenero version melts with buttery softness and whispers of hay, while the aged duro develops a firmer crumb and assertive nuttiness with herbaceous undertones. Either way, you'll find subtle tang threading through, a semi-hard texture that yields to pressure, and that distinctive cellar earthiness that speaks of Piedmont's mountain caves.

The story
How it's made.
Why it tastes that way.
Bra takes its name from the Piedmontese town of Bra in Cuneo province—hometown of the Slow Food movement.
It was historically traded at the Bra market, where merchants brought it from mountain producers. Both a soft fresh version (tenero) and a harder aged version (duro) exist under the PDO, granted in 1982.
