Pecorino Toscano is one of Italy's oldest cheeses, with records going back to ancient Rome when Pliny the Elder described Etruscan sheep milk cheeses from this region.
Unlike other Italian pecorinos, it is typically mild and soft (fresco) or semi-aged, not sharp. PDO was granted in 1996.
