Chaource.
Chaource is a cloud of edible silk—its bloomy rind yields to finger pressure, revealing a butter-soft interior with a subtle earthiness that whispers of forest mushrooms and fresh cream. The flavor starts mild and lactic, almost delicate, before a gentle tang emerges on the finish, making it feel lighter and more elegant than its luxurious texture suggests.

The story
How it's made.
Why it tastes that way.
Chaource takes its name from the small town in the Aube, at the heart of Champagne country.
It has been produced there since the Middle Ages and was once traded at the Champagne fairs. The cheese received AOC protection in 1970 and pairs classically with the local sparkling wine.
