Neufchâtel.
Neufchâtel's downy white rind gives way to a cloud-soft paste that melts into tangy, lactic richness—earthy mushroom notes weaving through notes of fresh cream and gentle salt. Each bite is delicate and milky, with a subtle umami depth that lingers on your palate like morning dew on a forest floor.

How it's made.
Why it tastes that way.
Neufchâtel is one of the oldest cheeses of Normandy, with written records dating to 1035.
During the Hundred Years' War, Norman women reportedly gave heart-shaped Neufchâtel to English soldiers, which is said to be the origin of its iconic heart form. It received AOC protection in 1969.
