Cornish Yarg was revived in the 1980s from a 17th-century recipe discovered in a farmhouse attic.
The name 'Yarg' is 'Gray' spelled backwards—the surname of the family who rediscovered the recipe. The nettle coating was a traditional preservation method that gives the rind a distinctive lacy mold.
