Gorgonzola is one of the world's oldest blue cheeses, a cow's-milk DOP from Piedmont and Lombardy named for a town near Milan. Dolce is its younger, gentler style — aged a minimum of 50 days, where its sibling Piccante goes 80 and beyond — which keeps a soft, creamy, almost pourable paste and a sweet, mild flavour with only delicate veining.
It's the one to melt into a risotto or a sauce, to spread on warm bread with honey, or to set beside pears on a board. Gorgonzola gained EU PDO protection in 1996 (Commission Regulation (EC) No 1107/96); each wheel carries the consortium's mark, and Dolce and Piccante are two expressions of that single designation.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
