Gorgonzola is one of the world's oldest blue cheeses, a cow's-milk DOP from Piedmont and Lombardy, named for a town near Milan. It comes in two styles from the same designation: sweet, spoonable Dolce, aged a minimum of 50 days; and Piccante — aged a minimum of 80 days, and often far longer — which develops a firmer, crumblier body, heavier veining, and a markedly sharper, more piquant flavour.
Piccante is the style for people who want the cheese to speak up: crumbled over a bitter-leaf salad or a steak, married with honey and walnuts on a board, or stirred into a robust polenta. Gorgonzola was granted EU PDO protection in 1996 under Commission Regulation (EC) No 1107/96; production is confined to defined provinces of the two regions, and each wheel carries the consortium's mark.

Use a thin or wire knife and wipe it between cuts; aim for wedges that share the veins evenly.
Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
