Kopanisti is Greece's most pungent cheese, made on the Cyclades Islands (primarily Mykonos) by repeatedly working and kneading (kopanisma) the curd with natural molds over weeks. It is the closest Greek equivalent to Roquefort in intensity.
PDO was granted in 1996. It has been made in the Aegean since at least the 18th century.
