Bryndza is a soft, spreadable sheep's milk cheese central to Slovak national identity.
It has been made in the Carpathian mountains since at least the 15th century, when Vlach shepherds migrated through the region. The Slovak PGI ('Slovenská bryndza') was granted in 2008; Romanian Brânză and Polish Bryndza Podhalańska have their own protected designations.
