Leipäjuusto squeaks. That's the first thing everyone notices — a fresh, mild, milky-sweet curd pressed into a flat round and baked or flamed until freckled with caramel-brown spots. Served warm with cloudberry jam, it's somewhere between cheese and dessert, and entirely Finnish.

Leipäjuusto — 'bread cheese' — comes from Finland's Ostrobothnia, Kainuu, and Lapland, where it was traditionally made from rich beestings, the protein-heavy milk a cow gives after calving (reindeer and goat milk versions existed too).
The fresh curd is pressed into a flat disc and baked, grilled, or flamed so the surface blisters into its signature toasted spots — hence the name. Once dried hard for keeping and softened in hot coffee, today it is eaten warm with cloudberry jam, and its famous squeak against the teeth has made it a beloved curiosity far beyond Finland.
