Queso Criollo isn't the work of a cave or a long, cool cellar — it's the work of a morning. Fresh cow's milk is gently warmed, set with rennet, and the curd is cut, drained, pressed by hand into a round or block, and lightly salted; within hours it's wrapped in cloth and on its way to market, and within days it's eaten.
It belongs to the rural dairy life of Bolivia's valleys and lowlands — Cochabamba, Santa Cruz, the inter-Andean valleys — where small farms have made cheese this way for generations, Spanish dairy methods long since folded into everyday local life. With no aging to hide behind, the quality of the milk and the hand of the maker show in every bite.
