Lighvan is Iran's great breakfast cheese: bright, salty, and sharply lactic, with the rich roundness of raw sheep's milk underneath. The paste is white and full of small irregular holes, crumbling cleanly over warm bread — tangier than feta, with a wilder, more rustic soul.

Lighvan takes its name from the village of Liqvan in the mountains of East Azerbaijan province, near Tabriz, where shepherding has shaped life for centuries.
It is traditionally made from raw sheep's milk — sometimes with a share of goat's — set, drained, and matured in brine for around three months, which gives the cheese its signature salty tang and pocked, holey paste. Across Iran it is the cheese of the breakfast table, eaten with sangak or lavash bread, herbs, walnuts, and sweet tea, and the Liqvan name carries enough weight that cheeses across the region borrow it.
