Manchego Curado is the classic, most widely recognised expression of Spain's most famous PDO cheese, aged 3 to 6 months from Manchega sheep's milk in the La Mancha plateau. Where the young semicurado is pale and creamy, Curado develops a golden-yellow interior, a firmer and denser paste with less elasticity, and a richer, nuttier, more caramel-forward flavour profile.
It is the most versatile and crowd-pleasing of the three Manchego types — equally at home on a cheese board, grated over pasta, or tucked into tapas. The PDO was established in 1984; the distinctive zigzag rind comes from traditional esparto grass moulds.
