Queso de la Serena is made from the raw milk of Merino sheep that graze the La Serena plateau in Extremadura. Like Serra da Estrela across the border in Portugal, it is coagulated exclusively with thistle flower rennet, which imparts a characteristic slight bitterness.
PDO was granted in 1992. It is traditionally eaten by cutting off the top and scooping out the creamy interior.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
