Torta del Casar is one of Spain's most distinctive cheeses, produced in the Extremadura region using the traditional method of curdling milk with the dried pistils of cardoon thistle (Cynara cardunculus) rather than animal rennet. This vegetable coagulant produces an almost liquid, spoonable interior at peak ripeness.
The cheese is traditionally eaten by slicing off the top rind and scooping out the creamy center. Production is centered in Casar de Cáceres, where shepherds historically made it during the winter milking season when Merina and Entrefina ewes produce richer, fattier milk. It received Spanish DO protection in 1999 and EU PDO registration in 2003.

Cut like a cake — slim wedges from the centre, through the rind. Don't scoop the middle and strand the shell.

Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
