Queso Fresco is the most widely consumed fresh cheese across Mexico and Central America, with roots in the colonial period when Spanish settlers introduced European cheesemaking techniques that combined with indigenous dairy practices. The cheese resembles the fresh curds made in Spain and Portugal (queso de burgos, requeijão) that colonizers brought to New Spain.
It is made by acidifying milk with vinegar or citric acid and pressing the resulting curd into a simple mold. Unlike ricotta-style cheeses, queso fresco uses rennet or an acid to produce a firmer curd that can be crumbled over food. It is a staple crumbled over enchiladas, soups, and street tacos throughout Mexico.
