Saint-Félicien.
Saint-Félicien melts on your tongue like warm butter infused with forest floor—a delicate earthiness that whispers of mushrooms without overpowering its gentle, mild tang. The texture is almost spoonable in its creaminess, yet structured enough to hold its shape, while the rind offers a subtle vegetal funk that grounds the cheese's subtle richness.

The story
How it's made.
Why it tastes that way.
Saint-Félicien is a very creamy disc cheese from the Ardèche and Rhône-Alpes region, often sold in the earthenware crocks in which it is presented.
Related to Saint-Marcellin but creamier and larger, it was developed in the 20th century. Despite its production scale, it has no PDO and is made by several producers.
