Scamorza is a pasta filata cheese of Southern Italy — Campania, Puglia, Molise, and Abruzzo — made like a drier, firmer mozzarella and hung to ripen briefly in its signature pear shape, the 'noose' around its neck giving the cheese its name (from scamozzare, to lop off).
The smoked version, scamorza affumicata, passes over smouldering straw or wood until the skin turns golden-brown and the paste takes on a soft smokiness. Because it melts superbly without watering out, Southern cooks reach for it over mozzarella on pizzas, in pasta al forno, and grilled whole as scamorza alla griglia.
