Burrata was invented near Andria in Apulia in the early 20th century, credited to the Bianchino family of cheesemakers, who were looking for a way to use leftover mozzarella scraps and cream. The name means 'buttered' in Italian.
The cheese consists of a thin shell of mozzarella encasing a filling of stracciatella (torn mozzarella strings soaked in cream), producing an explosively creamy center when cut open. It was originally wrapped in asphodel leaves, which served as a freshness indicator — the cheese should be consumed while the leaves remain green. Export demand in the 21st century drove industrial production, though authentic Apulian versions remain perishable.
