Västerbottensost was created in the 1870s in Burträsk, Västerbotten, reportedly by a dairy maid named Eleonora Lindström who kept getting distracted and forgetting to stir the curd, accidentally developing the unique texture and flavor.
The recipe has been produced at the Burträsk dairy ever since. It is Sweden's most beloved cheese and essential at Midsummer.
