Byaslag belongs to Mongolia's tsagaan idee — the 'white foods' at the heart of nomadic dairy culture. Made in the ger from the milk of cows or yaks, the curd is wrapped in cloth and pressed flat between boards, yielding a firm, unaged cheese that keeps as families move between pastures.
It is eaten on its own, with fried bread and tea, or dried further toward the rock-hard aaruul curds that sustain herders through winter. Few cheeses are as tightly woven into a way of life still practised across the steppe today.
