Adyghe cheese is the cheese of the Circassian people of the North Caucasus, named for the Republic of Adygea where it has been made for centuries. Rather than rennet, hot fresh milk is curdled with fermented whey — a whey-set method that yields a tender, mild cheese eaten fresh, smoked, or dried for the road.
Circassian folklore and song celebrate it, and in Russia 'Adygeysky' became famous far beyond the Caucasus as a Soviet-era dairy staple. The name is protected in Russia, and the cheese remains central to Circassian tables at home and across the diaspora.
