Bandel cheese is a relic of Portugal's seventeenth-century colony at Bandel, on the Hooghly river north of Kolkata, where Portuguese settlers taught local dairymen to curdle milk with acid and drain it in perforated pots. The little discs — plain white or smoked a deep tan — are heavily salted and dried, giving them a long life in the Bengali heat.
The tradition survives almost invisibly: a handful of makers supply Kolkata's New Market, where the cheese is sought out by those who know. Soaked, crumbled, or eaten neat, it is one of Asia's most distinctive colonial-era cheeses.
