Queso costeño is the cheese of Colombia's Caribbean coast, born of cattle country and a hot climate where salt was the only refrigeration.
Made from cow's milk, pressed firm and salted hard, it keeps in the heat and doubles as seasoning: coastal cooks crumble it into arepas de huevo, carimañolas, and bollos, grate it over sweet plantains, and melt it into stews. Its salt level varies maker to maker — some versions eat like a fresh table cheese, others are nearly a condiment — and it remains one of the foundations of costeño cooking.
