Cottage cheese is a fresh, unaged cheese of loose curds dressed with cream or milk — one of the simplest cheeses there is, and among the oldest in idea. The name is American: it appears in print by 1831 (in Godey's Lady's Book), tied to the thrifty farmhouse habit of turning leftover milk into a quick "cottage" cheese.
The curds are set, cut, gently cooked and washed, then dressed; fat and curd size vary from small-curd to large-curd, low-fat to creamed. Neutral and high in protein, it's as at home under fruit and honey as it is folded into pancakes, lasagne, or cheesecake — which is exactly why it never left the American fridge.
