Dangke comes from the Enrekang regency in the highlands of South Sulawesi, where farmers have made it for generations from buffalo — and now often cow's — milk. What makes it remarkable is the coagulant: fresh milk is heated and set with the latex of the papaya plant, whose papain enzyme curdles it without rennet.
The curd is pressed in halved coconut shells, giving each cheese its domed shape, then lightly salted and wrapped in banana leaf. Locals fry or grill it to eat with rice and sambal; it is a traditional heritage cheese of the Enrekang highlands.
